how far do you guys recon a hilux with a couple of teeth missing on a gear on the mainshaft can be driven?

depends on how hard you push it, how much HP you are going to put through the box and how much additional potential damage you are willing to accept. I would limit the use and drive it very very softly to reduce the chance of spitting more chip fragments about the box and damaging other untouched gears.

which gear? if there are still enough teeth left to allow the gear to freewheel in constant mesh with that gear not engaged, then you should be able to keep driving it more or less infinitely as long as you don't select that particular gear.

eg if it is 2nd gear broken, just shift first straight to third.
