Searched, but lucked out.
Anyone have any idea whether coilovers are legal in NSW? Engineering point of view especially, ie: will an engineer pass them?
Obviously, there are the ways they are mounted etc, but I'll look into that when I work out if an engineer will sign off on it.

Try speaking with an engineer, usually the one your going to use on your rig is a good starting point.
