1 Jack and 2 axle stands that reach the chassis does the job

Why was there extended shackles in there?, if you have ifs leaves in the back (and it is not a ifs hilux), normal shackles will not fit.

Jack back up by diff, put car stands under chassis rails, you'll need to pack the stands up with TIMBER or steel, not bricks so that they are high enough unless you have 4x4 stands.

let the jack down until the stands sit on chassis obviously haha, then a little bit more, and undo the shackle nuts, fiddle round with the jack until the jack is right so the pins will knock out with the least amount of effort possible, i'd replace the bush's while i was at it, and get greaseable shackles.

make sure you take the load of the diff off the springs, but dont compress the springs in doing so or a spring might fly at whatever body part is in the way, easy to work out the shackle pin will come out easier when you have it right, just jack the diff little bit by little bit until the pin starts to come out with flogging the crap out of it.
