Hey I have finally used my Hi-Lift jack and I was just going to pressure wash it to get all the dirt and crap out of the lifting mechanism.
My questions are:
Is that the right way to clean it? Is there a better way to?
And what should I lube it with where the paint has rubbed off so it doesn't rust and where else should I lube it?

I usually give it a good hose off, the a big spray of WD40 around the pins and other moving bits. Depending on where you carry it, grease or oil can attract dust and dirt, which only makes the issue worse when you need it next. Give it a quick squirt just before use.
Mud makes excellent toothpaste.

yeah x2 on the grease getting messy and collecting dirt.
If I ever clean the grease off mine, I reckon a little bit of the nickel anti seize paste on the moving parts would be the go

Try graphite powder, commonly used by locksmiths for the same anti-gunk collecting properties.
