Measure it before turbo, after just leaves too much guesswork, the difference in temps before and after vs vary dramatically, after gives a poor reading.

700 is fine in a 1HD-T. I had mine tuned to run up to 750, if would go higher if pushed really hard on steep hills. Having EGTs peak a little higher didn't bother me for short bursts only, as Iwas running a hiflowed turbo and high boost, so the cylinders, pistons, valves etc all get a good dose of comparitively cool intake air.
