My current 73 series has 35" pedes on 15x7s, and I need 2 inch wheel spacers to stop them rubbing. On an old 73 series, 36s on -22 offset 15x8s rubbed, but didn't when I put them on -22 15x10s.

You'll need massive offeset to stop the scrubbing, I have something like -50ish total and they still rub on the chassis under flex, I dont really worry about it though. Put a 80 series rear diff in, will pretty much stop it then.

OK was thinking around that amount would suit best,
and while we are on the rim/tyre subject does anyone know if 15 inch rims fit on the 79 series ute?

No, they will hit on the caliper plus no one makes a 15" rim in the five stud with the correct PCD.
