What is wrong with a 1L as a starting point for a non-standard Zook?
What are the down sides for fitting later model stuff to one. Is the engine bay tighter? I had a 1L once, with a Toyota 2TG twin cam 1600 but it was more than 15 years ago and it was tight. That much I remember.
Assuming the engine, driveline and diffs are all going.

they crawl quite well but on the beach dont expect to climb any dunes and with anything other than standard
tyres dont expect to get over 80-90km/phr into a breeze. They will suffice if all your wheeling spots are close by
but will test your patience if you have to cover some miles or use it for a daily commute.
they 1.3 jimny engine and 1.6 vitara/baleno engines are a very easy swap, but depending on what year 1ltr you
have g/box and engine mounts may need modding, there is a write up in the bible.

the reason the 2TG was a tight fit is that they are a very very big motor for a 1.6 (but they rev hard)

My old 1 l would sit on 100km - but not any more.

My old 1.0 litre LWB would do 115 flat out but would sit on 105 all day, it really was a little champ.

My girlfriend of many many years ago purchased one, chewed oil like you would not believe ..
Rebuilt the motor with new rings, bearings, valve stem seals etc. ( the oil rings were really really badly clagged up)
It was done it was a great little car to drive post re-ring.. I could get about 600ish K's to a 40 litre tank open road running sitting on the speed limit pretty easy .. ran out of revs at about 115-120 ...

i had 1 1litre zuk out of 6 zuks lol. had a similar geared 1.3 on same size tyres etc and my opinion is that the 1 litre was a better rig,it went well.i bought it off my dad and over the years the little rig done plenty of miles and big trips
sierra truggy,37 sticky treps,propane,6.5s and disconnect,lux diffs with spools,16" fox shox,hydro steer.

31" tyres + 1ltr = misery
even with 6:5's, extractors, intake and timing the 5 x 1ltrs i have had all struggle to hold 90 on the straight sections and 80 is optomistic on anything resembling a incline
but if your crawling then does the job

ive had a few 1L never a running 1.3, but the 1L run well! the gear box tunnel is smaller then the 1.3 so putting in a bigger box needs mods

Oh, I dont know about travelling in a 1 litre Zuke.
Outside the Croc Shop, back in 1992, when it was at Punsand Bay T/O. Fully loaded 6x4 trailer in tow. Mum, Dad and the 2 kids inside. Did the old telegraph track both ways, Frenchmans Rd to Chilli Beach, Old Stone Crossing to Weipa.
Even drove Gunshot,
and the old Jardine River crossing- 8 times.

In short. They are good to start with but I hope you play close to home as there not the best for distance with bigger tyres
Suzuki Sierra, 6.5 twin sticked transfer,f&r 4.88 locked diffs, full exo, ute chop, bead locked 35 claws,winch,long travel shocks,stretched chassis.

1l is no worse than a 1.3L. Infact, they rev easier, run better on side angles, and look cooler with the steel front grille.
My old LWB 1l would sit at 120-130 on the highway. Was revving about 7K, but never had an issue.
Just remember that they have smaller diffs/ cv's etc, so you will run into strength issues before a 1.3L sierra would, once you start adding weight and bigger tyres.
