what brand and type of paint do I use?

I would go a bitumen paint.

I would be inclined to leave them alone. If you paint them with a good flexible paint, eventually a crack will develop somewhere and water will get in and cause more rust, leading to possible failure down the track.

I just give them a good smear with grease. every so often.

I just use the cheap black paint from bunnings, just need to redo it every couple of months

I'd go for a pressure pak of chassis black, its durable, its flexable, and to date its never failed me on any of my vehicles
