Blocked\ dribbling injectors, fuel presure reg, coolant temp sensor, airflow\map\maf sensor. Get a code check done first to see if any sensors are u\s. Then maybe pull the injectors and get them tested and cleaned.
Hard to tell without looking at the vehicle, but a code check would be the first thing I would do.

A shop with a scan tool would be the go. You will need a repair manual to do a manual code read cos you will need a code list. Maybe someone here has one.

Apparently 96 and newer vehicles use the OBD2 system.

gday muddie, first thing to do is get a diagnostic code readout from a workshop with an ob2 reader, or get a holden dealer to use the tech2 unit. the diagnostic plug is tucked behind the centre console panel just back from the footrest.
If it is randomly overfuelling etc, then running fine it is most likely a prob with one of the load sensing circuits, eg - air flow meter, map, oxy sensor. It is common for the v6 to get some moisture in the connectors on the engine even though they have nice seals built in , so grab a can of electrical contact cleaner and go over all the connectors one by one giving the plug and base a good clean, a friend with the 3.2 v6 had very similar problems and it was only moisture in the throttle position sensor connector, cost $0 to fix. Remember most of the load circuits use resistance readings so any oxidisation or corrosion and moisture in the connectors will bugger up the signals.
cheers Brad
