How do I isloate the main battery (switch it off) from in the cab.

get a mass arse relay and put that in the engine bay. and control it with a cabin mount switch........
i dont think youd be able to get a relay that big that would be a practical size......... i guess the only way to do it is run the cable back into the cabin then back to the battery, hook it up to the out going cable.....ive seen this done b4, but that was in a little cortina and it only had 10 mm cable, you might need a 25 mm cable for yours

If you want to isolate the battery to prevent loss of charge, then put a switch under the bonnet, as a relay would be unpractical, and running all that cable to put one into thecab without as relay would potentially cause charging probs etc.
If it is antitheft, isolate ignition somwhere away from the stalk so if some lowlife does decide to try and stealit, they wont see the isolator.....and don't mount in your glove box or crap like that

compitition electrical disable switch.
Easy one to answer
go to super cheap and look for the battery disconection switch, its a kick ass switch you can mount in your bonnet or gaurd or dash, used by lots of racing teams in all sorts of motor racinghas big red removable key.

Last thing you want to do when you are hanging upside down is to try and turn a switch....I would look at a push type one.
Having said that, I think that the ones race cars use actually cut fuel off.
