I am thinking of putting 31" tires on my hilux instead of 30" tires in order to pring the highway revs down a little - which will hoefully improve my fuel mileage.
Does anyone have any insight on this.

Go for it!!

There is pleanty of clearance so rubbing won't be an issue. most likley you will have 4.88 diff gears so you won't notice a loss power.

Just wondering if the lower rev's will improve the fuel mileage at all? or is it too little to notice

It might actually work the other way and increase your fuel consumption.

Unless you have a bigger power output (read turbo for a diesel) your engine will be working harder to keep up the speed which can lead to higher fuel consumption.

What engine and gearbox you running? what model lux?

My 2.8 diesel lux does 2750rpm @ 100kmh in 5th on worn Desert Dueler 31's and averages 11.5L/100km.
