I'm looking to put some mudstars on my rig, 29's or 30's
just want to know the best width rims for these size tyres?
any help greatly appreciated.

7's i think would be ideal for you. Also think for the future to what size you may want to run later. 7's can have up to a 10.5 wide tyre i think.

Go with a 7, but get speedy's (not ROH) speedy wheels have about 3.5" of backspace with a 7" rim, whereas the ROH's have about 4.5"
The 3.5" of backspace is far more suitable.
You only need an 8" rim if you want to go over 10.5 wide with your tyres, not somwthing I would really recommend for a "mild" sierra, plus, if you "over rim" i.e running a 10.5 on an 8" rim, the tyre will be more likely to comeoff the bead at low pressures, and the rim will be more likely to be damaged and pick up rubbish as there is less sidewall bulge protecting it.

I was looking at the procomp rims in black but i think they only come in
8's which sucks cos they come already black instead of a spray can job.

White wheels painted black will be a fair bit cheaper than procomps I reckon.
Rims then to cop a fair hiding, so having them painted in a colour you can easily replicate ( i.e rattle can black) will make for better looking rims in the long run.

Yes, this will happen with ROH rims as they are backspaced to suit a vitara rather than a sierra.
It will be far cheaper to get the ROH's offset to suit your requirements than to buy spacers.
Most of the time, correctly backspaced 7's are a better option for a sierra than 8's.

? Where do you get 8" being illegal from? here in sunny QLD it is considered illegal (so far as i know) only if the tyres aren't covered meaning get some flairs on it and make sure that your mudflaps cover at least half the tyre going down (i think it is half). after that it is fine. the flairs on a wide track seirra should cover the width of the tyre and just get a sheet of rubber to make up more mudflaps.
and the all important hilux axles...
