look around at canvas shops, and or upholsterers.
i got mine custom made for just under $300. maybe you could get a better deal if you shopped around. if you get a custom one made, you can have pretty much what you want in ways of windows, zips, openings, etc. you can also get tinited windows now for soft tops. and you can get whatever colour you want also.
if you can, get them to plastic weld the windows in, otherwise water may leak through the seams or stitches.

anyway, i had mine done for under $300, but i had to give up my old one. my old one was shagged anyway, and the dude used a few bits off the old top for the new one. the canvas weight and quality also plays a part to how much you want to spend. mine is light, and very durable, but gets very hot very quickly. it also stretches and shrinks a lot with the humidity up here too, which means i cant leave the top off over night, or leave the back window out for a few days. (other wise the canvas shrinks and doesn't quite fit anymore)
you might find thats its a little more than $300 if you want a good quality one that'll equal the suzuki factory ones, but not more than $350-$400 custom made. most places wont charge very much for extra zips or windows etc etc.
probably figure out what you want, and think about it properly first, to see if its what you want. then get one made. i got a price for a new vit soft top from best tops or something like that, and it was $615 excluding freight.
a bad thing with the fast back styles like mine, is that there are no side windows on the top, and so the blind spot actually is a blind spot. this may not seem too bad with a short wheel base, but i'm had my fair share of scares. (its hard to see ricers that drive in blind spots with a lifted 4by)
so if your keen, draw something out, and take it to a few places. you could try getting them to beat each other with prices etc etc.

Custom made to the car, takes about two hours and 300 is what i paid for the fastback style a coupla years ago, chunky zips last longer to..
Only hassle is the stitching will tend to leak, even with tent wax stick and stuff...

with the back on my vit on, people would have to lean real far forward to fit, and thats no tall lanky dude either, but with the back window off, you can sit in the back normally, but your heads would be outside.
when i had the back seat in the vit, a lot of people used to love sitting in the back, as it feels as though your outside (which you sort of are). girls like it more, dunno why.
not too sure in a sierra tho, in the vit, mostly peoples' heads are the only thing outside. not good in winter, or wet seasons.
