I Have a Hilux, Its nothing fancy, but it gives me plenty of fun!

An engine conversion shop up here has told me a couple of times the motor he would put in lux would be supercharged mustang motor (guess what he has on e for sale $2000) and after hearing him it sounds like a good conversion. Because of the USA heritage there is a whole stack of boxes you can put behind it- pretty much same as for Chev gear.
My only worry would be parts availability as this is a rare engine in OZ.

I've got a ford V8 to supra 5 speed bellhousing in the shed. The bellhousing will bolt straight up to a hilux box, but the hole for the clutch fork is on the passenger side, but that would probably still be ok if you used the ford slave cylinder and master cylinder. I used a holden v8 to supra 5 speed bellhousing in my hilux. I'd go for a windsor, a cleveland would be too big and heavy for a lux.
