Dude, most people just chop the rear section just infront of the tailgates/barn doors and re-weld them up to where ever they want the cab to end.
There will need to be reinforcing done, but best to speak to an engineer(or the engineer that will be certifying it!!) to find out the ins and outs of it all.
I'll be chopping mine in the future too(xtra cab)... but I've been saying that for nearly 12 months now so who knows!!!

I did a chop to mine, took some time but I am pretty happy with it. We cut behind the 'b' pilar on the top and in front of the lower cross member (leaving the cross member in) and fitted a panel that was plasma cutted to shape and put reinforcing across the back of that panel. Initially we had a window out of an early model dodge ute but long storey short we ended up getting on cut to fit the hole. Still have some little things to do but its around 90% complete. I have added a few pics so you get an idea of what we did.

I'm in the process of doing what Brighty suggested above. The only problem I have re-joining the original back with standard openning hatch is that these thing taper off more than I though towards the back of the car. I have to extend the back piece out about 2 inches each side, outside of the hatch area. All possible but time consuming. I want it to look factory rather that using flat sheet on the back.

Turbo4t , i am curious as to where you are going to join it back up , are you keping your rears doors , or are you making a single cab ute.
I carnt seem to make it out ,
i guess its quite simple once you explain , also how recent are these pics ??
and most of all its good to see another 60 getting the chop !!

I'm keeping the top door with hinges and all, and fabricating or modifying the lower tailgate to suit the wheel arches. I cut it just behind the rear seatbelt mounts but the rear section will add another 8" or so. The pics arn't recent but it hasn't changed much since then.
