Many people are reluctant to give advice on brake modifications, because of safety and legal issues.
There is no simple bolt on set of rear discs for a zook, but you can buy kits to do this, and there is plenty of back yard conversions to look into.
There is much info on here, too, try searching button.
Its best to join a group or club and have a closer look at whats done.
I have nissan pintara rear brake calipers, with front zook discs, on rear of mine. These have a facility for hand brake, too.
I can't go into details, as the guy who did it for me wants it secret squirrel, sorry.
Rear discs is a good thing, but won't be cheap.
I only paid for parts, but he would have to charge for 2 days work, if he was in business.

rear disc brakes

i've got 4 wheel disc brakes on my zook. best thing i've ever done. use a set of serria front rotors and calipers. u also need to get hold of a mounting kit, unless u know someone with a mlling machine. u do not need to do anyother mods to your braking system.
as far as engineering, not an issue as long as it put together right, passes inspections, and braking tests.
total cost of my set up $250.
