Currently running two sets of tyres on my County 235/85R16 Cooper STs for trail/highway and 265/75R16 STTs for offroad. Both sets are fitted to 16"x7" Discovery Steel Rims.
My 265's rub on the upper spring mount on articulation.
I'm contemplating going to a 255/85R16 (33") and want to alter the offset (which I believe is 33mm) to move the tyre further out from the hub.
Questions:
1) I've read on this forum that the original rim offset for County's was also 33" but was a 5.5" width rim. Is this orginal offset correct ?
2) What would be the recommended offset for 255/85's ? I know in QLD we can go out 25mm, but don't want to go more than I need and have rubbing issues elsewhere.
Opinions ?

My old man ran 255x85s on his 110 with 130 rims - 16x6.5 with tubes, and then later on with disco steelies with the centers cut and given 1" further offset and tubeless. I dont think you can go more than 1" without flipping the rim because it tapers down. Neither scrubbed with a 2 inch lift.
What brand are you looking to get, he had bfg mudders (not KM) and loved them.

I've run 255's on a 90 on standard rims, standard alloys and also on some whitespokes with some more offset. This was with 2" spring lift but should be a gerneral guide.
- on the standard rims and alloys they touch the rear tub (taller) and I had to extend the bumpstops. They also hit the radius arms but adjusting the lock top bolts fixes that - but decreases the turning circle.
- Some offset is good, gives you some turning circle back but starts to catch them on the flares if you get too much offset. I just trimmed the flares.
Basically you can use standard rims and get away with it, but if you have to buy some then you may as well get 25mm of offset. Doesn't make a huge difference.
Also, I run the BFGs and found them very good, but have just gone to 285/75's and think the additional flotation may be very handy on a 110 especially in sand. I just fitted mine to standard alloys (smiths copies of disco alloys) and with trimmed flares, longer bumpstops and a spring lift they fit fine. They are also 33" but an inch or so wider than the 255's

A mate of mine runs 255/85s on disco rims with 10mm extra offset over stock on a 110 county. He has no problems with rubbing.
I have a set of 285/75s on disco rims with 30mm extra offset over stock. These were not originally for my county, but they are ok. The rear tyres rub the top of the flare (where it meets the guards) on full articulation. The fronts are fine on articulation but rub the exhaust on full lock (only a problem on ISUZU models). 255s on the same rims would probably not rub.
Both trucks have 1-2" spring lift.
