Does anyone know why the disc doesn't have a recess that would allow the studs to be removed/inserted without having to pull out the hub?

No? But removing the disc rotor from the stubb axle is a very easy job

stool do you mean the bolts from the hub face thru to the rotor can be undone and the rotor can be moved back far enough to let the studs out without having to undo the axle nut/remove the hub at all?
