the probe is after the turbo, 100ks 5lbs boost under 200c just cruising in 5th flat out in 4th up hill 9lb boost just hits 500c,excellerating at a good pace from lights in 3rd,4thand 5th hangs around 400c does this sound reasonable

sounds OK.

the best way to test it is to find a long steepish hill, its better if you are loaded, but not essentilal.
you want to start at the bottom in 3rd or 4th gear doing around 1800-2000RPM, bury your right foot in it and hold it at full throttle as long as possible push it to redline if possible (or until it runs out of puff).

watch your EGT guage rise and see what temp it tops out at.

A diesel will produce most heat when under load, full throttle acceleration. you are adding lots of fuel, but the engine is struggling to rev up so it is not capable of using all of the fuel. Excess fuel creates heat.

others might chime in, but I think with the probe behind the turbo, you should limit the EGTs to around 550deg C (650 -700 if probe before turbo). a short burst over that is probably OK, but you shouldnt consistently push it and hold it at higher EGTs
