Get your car on a clear bit of gravel/grass/bitumen. Lock the hubs in and put the car in 4WD (either high or low). Turn the steering wheel full lock and then drive in a circle slowly, then repeat procedure going the opposite direction. If you hear the same clicking noise doing this test as you did while on the sand - its 99% likely you have a crook CV (or two!).

Sounds very similar to what mines doing.not constant but rather intermittent, say every 500m on a beach

Mines doing the same thing (gq ute)
a loudish clunk from what sounds like the drivers side,
happens intermittently, only seems to happen when i get in the soft sand.
it kind of feels like it is unlocking a hub then locking back in again if that makes sense, i have replaced my locking hubs with no success and there is no play in my wheel bearings
its driving me crazy,
noise

Could be a split cv cup. As the wind up increases, the cup expands and the inner race rolls round the to next slot. BANG.
