Choosing gear ratio's

Planning and purchasing for my Hilux project and am looking at diff's, gears, transfer reduction etc..
The power is from a 1UZ to a 4 speed auto through a Hilux transfer to Landcruiser diff centres turning 315/75X16 (35's) tyres, maybe 37's for play, this car will also have full N.T rego .
Up here we don't have a lot of hills (but will be making the most of what we have) and a lot of this vehicles work will be corrougated dirt at moderate speeds, a bit of mud and possibly the Townsville and Mackay comps if it ends up being good enough.
My original plan was 4.8 diff gears and 4.7 transfer gears, I was speaking to a fellow Outers member who thought for my use, this set-up may be too low a gearing .
Anybody have a similar set-up ? Would taller diff gears be better with the transfer reduction ? or stay with the diff reduction and lose the transfer reduction ?
