Why run 24v?
I think you can have 12V.
If the batteries are connected in series, then the juction between the batteries (+ve to -ve) will be at 12V potential WRT to earth.
There is also 12V potential between the junction and the +24V.
However this defeats the purpose of having 24V, as only 1 battery would be used to supply 12V.
So it's a waste.
Just get a good 12V alternator and a good second 12V battery (with good battery mangament), and a good 12V winch.

the problem is that we wanna 24v the winch so it will go really really fast
but still run the car
and it's gonna be a pain in the ass to run two altanators with everything else that's there on the 383 chev there's not much room left in the bay anymore

Don't try getting 12V off one of the batteries used for the 24v. Doing that causes charging problems and eventually you'll stuff one or both of them.
