I could keep my slightly warmed up 1.6 cool with a stock standard 1.3 radiator even 2/3rds clogged with mud on a 35+ degree day (execpet in the real slow stuff it got a bit warm, but nothing a 5 minute shutdown would not fix)

Did you know tha when you shut an engine down the core temp raises between 30 - 50 C as there is no oil or water flow to cool anything.
The only exception to this is if you have thermo fans and a electric waterpump that stay operating after the engine is switched off.
This is one of the reason turbo timers exist. They give the motor a no load cooling period.
If you need to cool an engine down quickly spray water on the radiator. just pour it over the radiator - the fan will do the rest.

I'm putting a thermo fan on the front of the radiator to push air through and have it on at low speeds as I've found it gets a little toasty in boggy sand.
I'd put that down to the spotties blocking air flow and the lack or air flow at that speed, prety much everything else is stock.
