Throttle Position Sensor usually plays funny buggers around 2000rpm mark on the 1FZ-FE so it could be this starting to fail, perhaps the Toyota diagnostic tool might pick up some fault codes.
This is often the case when water/mud get's into the TPS sensor and they don't rev past ~2500rpm

It is just above the injector lines. You wind it IN towards the engine to increase fuel, start off in small increments as every pump is different. Iv'e just completed the 1HDT/CT26 turbo conversion on my 1HZ. The studs are all the same however the manifolds are different being 3 stud flange on 1hz and 4 studs on the 1hdt to suit the CT26. Hi Nik Loose baffles in sub tank perhaps? give the fuel tanks a good kick. Place your hand on upper and lower control arm bushes and get someone to rock your car backwards and forwards in gear, you will be able to feel movement in bushes this way. Might pay to remove and check panhard rod bushes too ...
