Thats like asking whats better for flipping eggs a metal or plastic spatula..
12.5 have a larger contact area, seem to be better on rocks.
11.5 being a narrower tyre seem to cut threw mud bettter. The 10.5s better again, but all up its much of a muchness..
As for actual size I guess it depends on what class you want to race in. Id say some comps 36" simex don't fit in trophy class.. So its up tp you I guess.

It's been proven time and again that the three lug 36 is better for winch comps as it 'handles' better at high speed and provides more flotation for deep mud (ground clearance not so much of an issue). You could have won the VicWinch with a 4WD Race Truck and not bothered with a winch or crossply tyres..........go a 37 X 17 radial and you'll eat the oppisition....
