Does any one no if there is a kit i could buy to convert my 1999 GU ute Coil /Leaf from Drum Arse end to Disk

you should be able to use normal gq/gu rear rotors, the bigger 4.8 gu rotors should also work. The rear rotors just slip onto the studs, then you need to make the caliper brackets.

On a GQ can you change the hub bolt on section and use the disc brake axle's and the drum center housing ?

gq drum housing is wider then disk housing and runs different axle bearing housing.

gq coil housings are an easy swap, complete housings and axles, hub to hub.

The leaf gu will need caliper mounts made, its not normally a hard job but may take a little time.
