The picture below is a yank truck... but i am really interested in the idea they have done on the tub... the cut down the bottom of the ass end of it.
my real question is how legal is it provided i remount the numberplate / mudflaps, and who is an engineer i can talk to just quickly about it?!?!

very true... but legalities is my main problem... this will stand out a bit more than a cut on the bottom of a wagon...

I doubt there are specific rules for this. But what you would have to comply with:
Still need a bumper, (I think maximum bumper height is in the ADR's).
Lights are staying in the same place - so that is OK.
Must be no sharp edges - fold panels properly after chop.
Will probably need mudflaps - think there is also a rule on this - amount of wheel that must be covered by mudguard/mudflap.

Mate got defected for various issues couple of weeks ago, not for the rear.
He chopped the back end like seen in photo, had to go back to inspection twice until they passed the vehicle for other issues, rear end was never mentioned and vehicle is passed with the tubs missiing right up to top of wheel arch and no bumper

Can't see why you need a bumper for a ute. Most utes don't come with them.
Some up spec models like SR5 etc. do but not most of the base models.
