as above ive got a 2.8d GU and every time i so much as drive through a decent puddle i loose power steering altogether till the water comes off and dries! is this normal or do i need to adjust belt or something else? thanks in advance!

The only part of the system that I can imagine being affected by water in this way is the belt, so even though it feels tight enough to you it's still the prime suspect in my mind. Everything else is sealed for high pressure; if it wasn't you'd have PAS fluid spraying all over the place by now.
I would therefore say - get a new belt. It's only going to cost ten bucks and they don't last forever anyway.
