Sounds pretty typical. lower rpm, load it up, and get fuel into it, and it gets hot. Back one gear, less load on motor, higher rpm, less fuel, then temp comes down. If your chasing things, look at its fuel delivery on large throttle settings, ie pump setting. sounds like its getting a bit too much ...

Its just a breather.
If you fit extended diff breathers, and gearbox breathers, dont forget to fit an extended breather to the fuel tank as well, put it on the opposite side of the filler up behind the cab.

Are you using the sr5 oil pressure gauge, or a calibrated screw into the block type, and what are the pressures at idle, and at 3000rpm.

they should be for a DIESEL 3L 2.8ltr

idle. more than 30kpa
3000 294 to 539kpa.
