Sounds pretty typical. lower rpm, load it up, and get fuel into it, and it gets hot. Back one gear, less load on motor, higher rpm, less fuel, then temp comes down. If your chasing things, look at its fuel delivery on large throttle settings, ie pump setting. sounds like its getting a bit too much ...

We got a 47lt evakool, and a 20lt icecool icebox. Works out as freezer, fridge, and crisper.
